Corned Beef Hash

Ingredients
1 lb. russet potatoes, diced
1 Tbsp. avocado oil
½ tsp. thyme
½ tsp. oregano
½ tsp. basil
Salt and pepper to taste
2 Tbsp. unsalted butter
2 garlic cloves, minced
1 small yellow onion, diced
2 cups finely diced corned beef
2 tsp. Worcestershire sauce
2 Tbsp. chopped fresh parsley

Directions
Preheat oven to 400° F. Place potatoes in a single layer on baking sheet coated with cooking spray. Drizzle with oil, then sprinkle with thyme, oregano, basil, salt, and pepper. Gently toss to combine. Bake 18-20 minutes or until golden brown. Set aside.

Melt butter in a large skillet over medium high. Add garlic and onion. Cook 3-4 minutes, stirring often, until onions are translucent. Add corned beef and cook 3 minutes, stirring often. Stir in potatoes and Worcestershire sauce. Cook an additional 4-5 minutes. Garnish with parsley and serve warm.
